There is no Brazilian meal without it. Fluffy rice depends on three things: rinsing well, toasting the grains until glossy and not stirring once the lid is on.
Method
- Rinse the rice in a sieve under running water until the water runs almost clear.
- Let it drain well for 5 minutes.
- In a medium pot, heat the oil over medium heat and cook the onion for 2 minutes.
- Add the garlic and stir for 30 seconds, without browning.
Add the rice and salt and stir for 2 minutes, until the grains look glossy and start to stick to the bottom.
Pour in the boiling water, stir once and boil over medium heat, uncovered, until the water drops to the level of the rice and small holes appear on the surface.
- Turn the heat to the lowest setting, cover and cook for 12 minutes without stirring.
- Turn off the heat and leave covered for 5 more minutes.
- Fluff with a fork before serving.
Tips
The ratio is 2 of water to 1 of rice, always with boiling water. New-crop rice needs a little less water; older rice, a little more.
