The name means "neatly arranged": each item sits in its own corner of the platter, and everyone mixes on their plate. It is the most ordered snack in Recife's bars, served as a portion to share.
Method
- Simmer the charque in 1 liter of the water for 20 minutes, to soften it and remove the rest of the salt.
- Drain.
- Cook the black-eyed peas in the rest of the water with salt for 15 minutes, until tender but whole.
- Drain and season with 1 tablespoon of the clarified butter.
Make the salsa: mix the tomatoes, the diced onion, bell pepper, half the cilantro, the lime juice and salt.
- In a pan, heat 2 tablespoons of clarified butter and fry the charque for 8 minutes, until golden.
- Add the sliced onion and garlic and fry for 3 more minutes.
In the same pan, unwashed, toast the cassava flour with the rest of the clarified butter for 3 minutes, stirring.
Arrange the peas, farofa, beef with onions and salsa side by side on a platter and sprinkle with the rest of the cilantro.
Tips
Desalt the charque the day before, in the fridge, changing the water three times. Frozen black-eyed peas work well and shorten the prep.
