Abará and acarajé come from the same black-eyed pea batter. Acarajé goes into hot oil; abará gets palm oil in the batter and is steamed inside banana leaves, the way the Bahian street vendors made it.
Method
- Rub the soaked black-eyed peas between your hands to loosen the skins, cover with water and discard the skins that float.
- Repeat until only the white beans are left.
- Soak the dried shrimp in warm water for 10 minutes to remove some of the salt.
- Set aside a handful of whole shrimp for the top.
Process the peas, onion, ginger and the remaining dried shrimp into a fine, thick batter, with no water or as little as possible.
Add the palm oil and salt and beat the batter with a wooden spoon for 5 minutes, until paler and airy.
- Pass the banana leaves quickly over the stove flame to soften them.
- Put 2 spoonfuls of batter on each one, top with a shrimp and fold into a tight envelope.
- Arrange the abarás in a steamer over boiling water, cover and cook for 40 minutes, until the batter is firm to the touch.
- Serve with vatapá and caruru.
Tips
Skinning the peas is work, but it keeps the batter pale and light. Abará freezes well wrapped in the leaf; steam it again for 15 minutes.
