Banana in farofa is one of the most Brazilian combinations there is: sweet, salty and fat in a single dish. It goes with feijoada, fried fish, barbecue and roast chicken.

Method

    • In a large pan, melt 2 tablespoons of the butter over medium heat and brown the plantains for 5 minutes, turning carefully.
    • Remove and set aside.
  1. In the same pan, melt the rest of the butter and cook the onion for 3 minutes, until golden.

  2. Add the cassava flour and salt and stir constantly for 5 minutes, until the flour is golden and loose.

  3. Turn off the heat, return the plantains to the pan, stir in the parsley and serve.

Tips

Use ripe plantains, with very yellow skin and black spots, so they caramelize. The farofa stays crisp for a few hours; keep the plantain separate if making it ahead.
