Canjiquinha is corn cracked into small bits, which in Minas Gerais becomes a savory porridge cooked in pork broth. It is wood stove food, for cold nights and big pots.
Method
Season the ribs with the lime juice, garlic, salt and black pepper and let them sit for 15 minutes.
In the open pressure cooker, heat the oil and brown the ribs over high heat, turning the pieces, for about 10 minutes.
- Add the onion, tomatoes and chili and cook for 3 minutes.
- Cover with 1 liter of the water, lock the lid and cook for 20 minutes once it reaches pressure.
- Let the pressure release, open the cooker and add the cracked corn and the rest of the hot water.
- Simmer uncovered over low heat for 25 minutes, stirring often so it does not stick.
- When the corn is tender and the broth has turned into a thick cream, adjust the salt.
- If it gets too thick, add more hot water.
Turn off the heat, stir in the scallions and parsley and serve very hot, with sautéed collard greens on the side.
Tips
The canjiquinha keeps thickening after it is done. To reheat, add a little water and stir over low heat.
