The bauru was invented in 1934 by a law student nicknamed Bauru, at a snack bar in downtown São Paulo. The cheese melted in a double boiler is its trademark.

Method

    • Boil the water in a small pot.
    • Put the mozzarella in a metal bowl over the pot, not touching the water, and stir for about 5 minutes until it melts into a cream.
  1. Split the rolls, pull out some of the crumb and toast them cut side down in a pan for 1 minute.

  2. Warm the roast beef in the pan for 30 seconds, just to take the chill off.

    • Build the sandwich with the roast beef, the tomato slices seasoned with salt and oregano, the pickles and the melted cheese on top.
    • Close and serve.

Tips

The double boiler keeps the cheese smooth and creamy, without the grease you get in a pan. Pulling out some crumb helps the filling fit.
