Spoon brigadeiro, also called brigadeiro de colher, is the birthday-party sweet without the work of rolling. It comes warm from the pot, goes into little cups and is eaten with a spoon, with sprinkles on top.

Method

    • In a heavy-bottomed pot, combine the condensed milk, cocoa powder and butter.
    • Stir with a spoon before turning on the heat, so it does not clump.
  1. Cook over low heat and stir constantly, scraping the bottom and sides, for about 8 to 10 minutes.

    • The spoonable stage is reached when, as you drag the spoon across the bottom, the mixture takes 2 to 3 seconds to close the path again.
    • It will thicken a little more as it cools.
  2. Turn off the heat and let it cool for 5 minutes.

    • Divide among 8 small cups or glasses and top with the sprinkles.
    • Serve warm or chilled.

Tips

Low heat and a spoon that never stops moving are what keep the mixture from sticking and burning on the bottom. To roll them, cook 3 to 5 minutes longer, until the mixture pulls away from the bottom of the pot, and let it cool completely before shaping with hands greased with butter.
