Baião de dois is the answer from Ceará to rice and beans: both cook together in the same pot with bacon and clarified butter, and the coalho cheese goes in at the end. It is a great way to use leftover beans, and it is ready in 40 minutes.

Method

  1. In a medium pot over medium heat, fry the bacon until golden and its fat has rendered.

    • Add the onion and garlic and cook for 3 minutes.
    • Stir in the clarified butter.
    • Add the uncooked rice and stir for 1 minute to coat it in the fat.
    • Add the beans with their broth, the hot water and the salt, carefully, since the bacon is already salty.
  2. When it boils, lower the heat, cover and cook for 15 to 20 minutes, until the rice is tender and the water is gone.

  3. Turn off the heat, scatter the coalho cheese, cilantro and scallions on top, cover and rest for 5 minutes so the cheese softens.

  4. Fluff with a fork and serve hot.

Tips

If the beans have no broth, add another 100 ml of water so the rice cooks properly. For a more traditional plate, serve with carne de sol or a fried egg on top.
