Vatapá from Pará is a thick cream of soaked bread blended with coconut milk, dried shrimp and nuts, finished with dendê. This version is simple and leaves out the tucupi, using only ingredients found in an everyday supermarket. It goes well with white rice.

Method

    • Soften the bread in the warm water for 10 minutes.
    • Gently squeeze out the excess, without drying it.
  1. In a blender, blend the bread, half of the coconut milk, the onion, garlic, ginger, chili and cashews until a smooth cream forms.

  2. Pulse the dried shrimp with a little water in a processor or in the blender itself, just until it is in fine bits.

  3. Pour the cream into a medium pot, add the dried shrimp and cook over low heat for 15 minutes, stirring constantly so it does not stick.

    • Add the rest of the coconut milk and cook for another 10 minutes, until thick and pulling away from the bottom of the pot.
    • If it is too heavy, add warm water little by little.
    • Turn off the heat, stir in the dendê and adjust the salt, carefully, because the dried shrimp is already salty.
    • Serve with the cilantro on top and white rice.

Tips

Rinse the dried shrimp well before using to control the salt. Vatapá thickens as it cools: when reheating, add a little water or coconut milk. The dendê goes in at the end to keep its aroma.
