Galinhada is the one-pot dish of Goiás: browned chicken pieces and rice cooked in the juices of their own sauté, dyed yellow by turmeric. It is ready in 50 minutes and feeds the whole family.
Method
- Season the chicken with the lime juice and salt.
- Let it rest for 15 minutes.
- In a wide pot, heat the oil over medium-high heat and brown the chicken for about 4 minutes per side.
- Remove and set aside.
- In the same pot, cook the onion, garlic and bell pepper for 4 minutes.
- Add the tomato and turmeric and cook until the tomato breaks down.
- Add the uncooked rice and stir for 1 minute to coat it.
- Return the chicken to the pot and add the hot water with a pinch of salt.
- When it boils, lower the heat, cover and cook for 20 to 25 minutes, until the rice is tender and the chicken is cooked through.
- If the water runs out early, add another half cup of hot water.
- Turn off the heat, let it rest covered for 5 minutes and scatter the scallions and cilantro on top.
- Serve with lettuce and tomato salad.
Tips
Bone-in chicken makes the rice tastier. Do not stir the rice after covering, so the grains stay separate. A whole finger chili in the pot adds gentle heat without burning.
