Arroz carreteiro was born on the cart trips across the South: rice, dried beef and whatever could be sautéed, all in one pot. The trick is to desalt the charque well and let the bottom of the pot take on color before adding the rice.

Method

    • Put the charque in a pot with cold water, bring to a boil and boil for 10 minutes.
    • Drain, change the water and boil for 10 more minutes.
    • Drain and cut into small cubes.
    • In the clean pot, over medium heat, fry the bacon until it renders its fat.
    • Add the charque and brown it for about 5 minutes.
    • Add the onion, garlic and bell pepper and sauté for 5 minutes.
    • Add the tomato and cook until it breaks down.
  1. Add the rice and stir for 2 minutes, so it takes on the flavor.

    • Pour in the hot water, taste for salt and adjust if needed.
    • Cover, lower the heat and cook for 15 to 20 minutes, until the rice is dry and tender.
  2. Turn off the heat, let it rest covered for 5 minutes and finish with the scallions.

Tips

If you want it soupier, as some places make it, use 1.2 liters of water. It goes well with a fried egg, farofa and a green salad. Leftovers become fritters: mix with egg, coat in breadcrumbs and fry.
