Feijão tropeiro comes from the muleteers who crossed Minas Gerais carrying beans, flour, meat and whatever else could travel. At home it is the tastiest way to give yesterday's beans a second life, in one large skillet and in under an hour.

Method

    • In a large skillet, fry the bacon over medium heat until it renders its fat and turns crisp.
    • Remove half with a slotted spoon and set aside.
    • In the fat left behind, brown the sausage for about 5 minutes.
    • Add the onion and garlic and cook for 3 minutes.
  1. Add the drained beans and let them heat through for 5 minutes, mashing a few beans with the spoon to bind everything.

    • Push the beans to one side, crack the eggs into the free space and stir until they set in firm pieces.
    • Mix everything together.
    • Add the greens and cook for 2 minutes, until wilted.
    • Scatter in the flour little by little, stirring, until the mixture is loose and crumbly.
    • Turn off the heat, add the reserved bacon, the scallions and the black pepper.
    • Taste, and only then adjust the salt.
    • Serve with white rice.

Tips

Use well-drained beans, because the broth makes the mixture pasty. Add the flour gradually: stop when the beans are loose, not too dry. It usually goes to the table with crispy pork rinds and fried banana.
