Dadinho de tapioca is a Brazilian bar snack: pearl tapioca cooked in milk with cheese becomes a firm dough that is chilled, cut into cubes and fried. Crisp outside, with a stretchy, hot cheese center. The sweet and sour pepper jelly is the contrast.

Method

    • Jelly: blend the chilies and bell pepper in a blender with 100 ml (scant 1/2 cup) of water.
    • Put in a pot with the sugar and vinegar and cook over low heat for 25 to 30 minutes, stirring now and then, until it reaches a soft jelly consistency.
    • Let it cool.
  1. Line a rectangular pan of about 20 x 20 cm (8 x 8 inches) with plastic wrap.

    • In a pot, boil the milk with the salt.
    • Turn off the heat, add the tapioca all at once and stir for 1 minute.
    • Cover and let it hydrate for 10 minutes.
    • Mix the grated coalho cheese into the still-hot tapioca until combined.
    • Pour into the pan, smooth the top and cover with plastic wrap.
  2. Chill in the fridge for 1 hour, or in the freezer for 30 minutes, until the dough is very firm.

  3. Turn out and cut into 2 cm (3/4 inch) cubes.

    • Heat the oil to 180 °C (355 °F) in a deep pot.
    • Fry the cubes in batches, 2 to 3 minutes each, until golden.
    • Drain on paper towels.
  4. Serve hot, with the jelly on the side.

Tips

The oil must be very hot, or the dadinho soaks up fat and opens. If it bursts while frying, the dough was not cold enough. The jelly keeps for up to 2 weeks in the fridge and goes well with cheeses, toast and meats.
