Minestrone is the best-known vegetable soup of Italy, and every home makes its own with whatever is in the fridge. This version has white beans and short pasta, is vegan and makes six servings, which makes it great for lunch boxes and for the freezer.

Method

    • In a large pot, heat the olive oil over medium heat.
    • Cook the onion, carrot and celery for 6 minutes, until soft.
    • Add the garlic and cook for 1 minute.
  1. Add the potato and zucchini and stir for 2 minutes.

  2. Add the crushed canned tomatoes and the water, season with salt and pepper and bring to a boil.

  3. Lower the heat, partially cover and cook for 20 minutes, until the potato is tender.

  4. Add the beans and pasta and cook for another 10 minutes, or as long as the pasta needs, stirring occasionally so it does not stick to the bottom.

    • Taste and adjust the salt.
    • Serve hot, with the torn basil on top and a drizzle of olive oil.

Tips

If freezing, cook the pasta separately or leave it a little al dente, because it keeps softening when reheated. The soup thickens in the fridge: add a little water when warming it up.
