Thai fried rice is the dish for using up leftover rice: it only works well with rice cooked the day before, already dry and cold. It is ready in 20 minutes, with egg, tomato and fish sauce, and lime at the end.

Method

    • Break up the cold rice with your hands, separating the grains.
    • Mix the fish sauce, soy sauce and sugar in a small bowl.
    • Heat the oil in a large skillet or wide pot over high heat.
    • Brown the garlic and onion for 1 minute.
    • Push everything to one side, crack the eggs into the free space and stir until they set in firm pieces.
    • Mix with the garlic and onion.
  1. Add the rice and fry for 3 to 4 minutes, stirring constantly, until the grains are loose and hot.

    • Add the tomato and the seasoned sauce and cook for another minute.
    • Turn off the heat and stir in the scallions and pepper.
    • Serve with the lime wedges.

Tips

Freshly cooked rice turns mushy in the pan: if that is all you have, spread it on a baking sheet and let it dry for 20 minutes in the fridge. Truly high heat and little stirring give the slightly toasted flavor.
