Oyakodon means "parent and child": chicken and egg in the same bowl, over rice. It is home cooking in Japan, ready in 25 minutes and made in a single skillet. The trick is taking the egg off the heat while it is still creamy.

Method

    • Dissolve the dashi in the hot water.
    • Add the shoyu, mirin and sugar and stir.
  1. In a skillet of about 24 cm, over medium heat, add the broth and onion and let it boil for 3 minutes, until the onion softens.

  2. Add the chicken, cover and cook for 6 to 8 minutes, turning once, until cooked through with no pink left.

    • Pour half of the beaten egg all over the skillet, cover and cook for 1 minute.
    • Pour in the rest, cover and cook for another 30 seconds, until the egg is almost set but still creamy on top.
    • Divide the rice between two bowls.
    • Slide half of the mixture over each, with the broth.
  3. Scatter the scallions on top and serve right away.

Tips

Beat the egg only until combined, leaving a few streaks of white: it gives the classic look. With a small skillet, make one portion at a time. The leftover broth is the best sauce for the rice.
