Enchiladas are corn tortillas dipped in sauce, filled, rolled and baked. The red sauce here is made with tomato, finger chili, paprika and cumin, easy to find at the supermarket and with no imported dried chilies.
Method
- Cook the chicken breast in water with a pinch of salt for 15 to 20 minutes, until cooked through.
- Shred with two forks and set aside.
In a blender, blend the tomato, onion, garlic, chili, paprika, cumin and water until smooth.
- Heat 1 tablespoon of oil in a pot, pour in the sauce and cook over medium heat for 10 minutes, until thickened.
- Taste and adjust the salt.
- Stir 4 tablespoons of the sauce into the shredded chicken.
- Heat the oven to 200 °C.
- In a skillet, heat the rest of the oil and pass each tortilla through for about 10 seconds per side, just to soften.
- Drain on paper towels.
Dip each tortilla in the sauce, place a portion of chicken in the center, roll up and arrange in a baking dish, seam side down.
- Cover with the remaining sauce and scatter the queso fresco on top.
- Bake for 15 minutes, until bubbling.
Serve hot, with a drizzle of cream and the cilantro on top.
Tips
Passing the tortilla through oil first is what keeps it from tearing when rolled. For less heat, remove the chili seeds and use just one. Leftover roasted or pot-cooked chicken also works for the filling.
