Aloo gobi means "potato and cauliflower" in Hindi, and it is one of the most common pot dishes in homes in Punjab. It is a drier sauté than a curry, with little sauce, all made in one pot with inexpensive vegetables.

Method

  1. In a wide pot with a lid, heat the oil over medium heat and cook the onion for 6 minutes, until soft and lightly golden.

    • Add the garlic, ginger and chili and cook for 1 minute.
    • Add the cumin, turmeric and garam masala and stir for 30 seconds.
  2. Add the tomato and cook for 5 minutes, until it breaks down and forms a thick sauce.

    • Add the potato, cauliflower, water and a pinch of salt.
    • Mix well to coat the vegetables in the spices.
    • Cover and cook over low heat for 20 to 25 minutes, stirring gently two or three times, until the potato is tender.
    • If the pot dries out, add a little more water.
    • Uncover and cook for 2 minutes to dry off the excess.
    • Taste, adjust the salt and finish with the cilantro.
    • Serve with rice, flatbread or plain yogurt.

Tips

Cut the potato and cauliflower into pieces of similar size so they cook together. Do not stir too much, or the cauliflower falls apart. It is great stuffed into flatbread, with plain yogurt on top.
